Carne Asada Nachos

When looking for an irresistible sharable camp appetizer, there's no denying that these carne asada nachos will be a hit. With very little prep time these delicious tortilla chips loaded with tender carne asada, pico de gallo, and classic fiesta toppings are guaranteed to win everyone over at the campsite with their delicious goodness.

CARNE:

  • 1 pound Diezmillo (beef cut found at Mexican grocery store) or skirt steak, slices in to thin 2 inch pieces
  • 1 tablespoon Oil
  • 1 teaspoon cumin
  • ½ teaspoon Black Pepper
  • Salt to Taste
  • 2 limes
  • 2 cloves garlic

PICO DE GALLO:

  • 3 tomato, small dice
  • ½ onion, small dice
  • ¼-½ bunch cilantro, chopped
  • 2 limes
  • ½ teaspoon cumin
  • Salt and pepper to taste

TO ASSEMBLE:

  • 1 bag or log of mozzarella, sliced thin
  • 1 bag corn chips
  • 1 can pickled jalapenos, chopped
  • 1 tub sour cream or crema
  • 1 tub guacamole

INSTRUCTIONS:

  1. Before leaving for your trip, prepare your pico de gallo and sliced beef.
  2. Begin by making sure the beef cut is free of excess fat or sinuous bits. Then cut it into thin short strips.
  3. Make the pico de gallo by combining all the chopped ingredients, squeeze in the lime juice, and season with cumin, salt and pepper. Adjust seasoning with salt and pepper.
  4. Once at camp, begin by preparing your beef.
  5. Heat a large cast iron pan with 1 tablespoon of oil, add the beef and seasonings (cumin, black pepper, and salt).
  6. Stir and cook until just browned, then add in your garlic. Continue by stirring the meat occasionally and cook the beef until a little crispy.
  7. Using a large platter, plate corn chips then top with the cooked beef, then squeeze on fresh lime juice.
  8. Heat a non-stick pan to medium heat, lightly oil, then separately place the rounds of mozzarella. Crisp the one side to a golden brown. 
  9. Flip the cheese on to the meat and chips, then top the plate with desired amount of sour cream, guacamole, pico de gallo, and pickled jalapenos.
