Chicken Tortillas
Bring something bold to the campsite! This chicken tortilla recipe brings all things delicious together, with crunchy peppers, juicy chicken, and a pop of salsa and sour cream.
Super easy and quick, every member of your crew can build ‘em just how they like, leaving nothing but full bellies and happy campers.
Ingredients:
- 1 lb marinated boneless skinless chicken breasts
- Marinade to your liking with: extra virgin olive oil, freshly squeezed lemon juice, balsamic vinegar, soy sauce, brown sugar, Worcestershire sauce, garlic, salt, and pepper.
- ½ bag fresh spinach
- ½ lb grated cheddar cheese
- 12 oz sour cream
- 1 jar roasted tomato salsa
- 1 pack corn tortillas
- 3 bell peppers, green, yellow, and red
- 1 white onion
- 1 avocado - ripe
Steps:
- Cut the bell peppers into thin slices
- Slice the onion, nice and thin
- Light your stove and preheat cast iron pan
- Salt and pepper your marinated chicken
- Add 2 Tablespoons of olive oil to the pan when it’s hot
- Saute the peppers and onions till softened and golden - set aside
- Saute the chicken till golden on the outside - flip it once and keep it juicy
- Thin slice the chicken
- Warm the tortilla in a second pan
- Build your tortilla, sour cream, chicken, peppers and onions first, then add spinach, cheese, and avocado. Garnish with salsa.
