Margherita Chicken

Bring some Italian food goodness to the campsite with our margherita chicken recipe. With ooey-gooey mozzarella cheese, fresh tomatoes, and juicy chicken, this simple recipe is sure to fill the bellies of even the hungriest camper.
Ingredients:
  • 2 Tbsp olive oil
  • 3 Thin chicken breast cutlets
  • White wine
  • Basil pesto
  • 1 can petite diced tomatoes
  • Fresh Mozzarella
  • Toasted pine nuts
     
Steps:
  1. Sauté chicken breasts on medium high in olive oil for 3 minutes on each side or until cooked through
  2. Add 1/2 cup white wine (for flavor and to de-glaze your pan) and lower heat to a simmer
  3. Add 3 Tbsp basil pesto on top of chicken
  4. Pour 1 can of petite diced tomatoes into the sauce around the chicken
  5. Place slices fresh mozzarella on top of chicken and pesto and cook until melted
  6. Remove from heat and top with toasted pine nuts
  7. Enjoy!
