Margherita Chicken
Bring some Italian food goodness to the campsite with our margherita chicken recipe. With ooey-gooey mozzarella cheese, fresh tomatoes, and juicy chicken, this simple recipe is sure to fill the bellies of even the hungriest camper.
Ingredients:
- 2 Tbsp olive oil
- 3 Thin chicken breast cutlets
- White wine
- Basil pesto
- 1 can petite diced tomatoes
- Fresh Mozzarella
- Toasted pine nuts
Steps:
- Sauté chicken breasts on medium high in olive oil for 3 minutes on each side or until cooked through
- Add 1/2 cup white wine (for flavor and to de-glaze your pan) and lower heat to a simmer
- Add 3 Tbsp basil pesto on top of chicken
- Pour 1 can of petite diced tomatoes into the sauce around the chicken
- Place slices fresh mozzarella on top of chicken and pesto and cook until melted
- Remove from heat and top with toasted pine nuts
- Enjoy!
