Chocolate Chip Pumpkin Pancakes

Wake up to a special morning full of fall coziness with our chocolate chip pumpkin pancakes recipe. This perfect blend of chocolate, cinnamon and pumpkin all whipped up in fluffy goodness is bound to kick start your next fall camping morning adventure.

Yields 10-12 5 inch pancakes

INGREDIENTS:

  • 2 cups pancake mix (Snoqualmie Falls Lodge is preferred)
  • 2 teaspoon ground cinnamon
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon allspice
  • ½ cup pumpkin puree
  • 1 ¼ cup whole milk (or alternative milk)
  • ⅓-½ cup chocolate chips
  • 2 Tablespoons butter, salted

TOPPINGS:

  • Pumpkin seeds
  • Whipped cream
  • Maple syrup

INSTRUCTIONS:

  1. Before your trip, mix together dry ingredients in a large container. (pancake mix, ground cinnamon, nutmeg, and all spice)
  2. At camp, add the pumpkin puree, milk, and chocolate chips, and mix until just combined.
  3. To cook, heat a non-stick pan or cast iron pan on medium heat. Once up to temperature, season with a little butter, then drop batter into the pan.
  4. Cook for a couple minutes until you see the bottom is nice and golden. With these pancakes, the bubbles may not foam as prominently as a regular pancake batter. Flip and cook the second side.
  5. Plate and top with pumpkin seeds, whipped cream, and maple syrup.
