Quinoa Macro Bowl
Because camp food doesn’t have to just be hot dogs and hamburgers.
Easy, quick, and healthy, this quinoa macro bowl incorporates fresh veggies, crunchy pepitas, and a splash of lemon, making this the perfect camp lunch to refuel for a day of play. We’re making ourselves hungry just talking about it. Let’s get cooking!
Ingredients:
- 2 cups quinoa
- 1 large cucumber
- 1 large shaved carrot
- 2 stalks of celery
- Roasted Pepitas
- 1 heirloom tomato
- 1 lemon
- 1 avocado
- ¼ cup olive oil
Steps:
- Begin heating large sauce pan
- Add olive to sauce pan, heat
- Add quinoa and toss it to toast it
- Salt and pepper
- Add 2½ cups of water to the sauce pan
- Heat to a boil then cut the heat
- Stir a few times as it cools
- Slice tomatoes and any other produce
- Place one large scoop of quinoa in bowl
- Add a tablespoon of olive over the top
- Build bowl, add tomatoes, cucumber, carrots, celery, avocado, and pepitas
- Squeeze with fresh lemon, salt an pepper to taste
